Crispy Quinoa Coconut Crunch (2 Ways!)

Okay so you guys know those sesame snap treats (these!)? Well this crispy quinoa coconut crunch tastes just like those but with coconut! I was so excited when I tried it because I love those sesame snaps, but obviously those have a ton of sugar. Now I can basically have them but just be eating a healthy little dessert that I don’t have to feel guilty about!

I made two different flavours – regular and dark chocolate. The dark chocolate one kind of has it’s own flavour, it doesn’t taste as much like the sesame snaps – but obviously are still very good (because chocolate). I also think they’re pretty! They’d be fun to wrap in cellophane and give as a gift or favor. Or just have in a dish on a coffee table to serve at a potluck, get together or party! Better than a bowl of hard candies, and better for you too!

I mentioned in my last few posts I got back into a workout routine after going through a lazy/anxious spell for a few months. Yesterday (wednesday) marked week 4! I always put a sticker on my calendar on the days I work out, and normally take rest days on thursdays and sundays (this sometimes changes if I know I’ll be really busy or gone all day on a certain day, and I’ll switch up my rest days – but still make sure there’s only 2 per week). I really can’t stress enough how working out and staying active helps my anxiety and well-being. It really helps my mind 10x more than it helps my body – getting more fit is just a bonus. I recommend just trying little workouts by yourself in your bedroom or living room. You’ll at least feel proud of yourself for trying – sometimes it’s hard to remember the last time you were proud of yourself. And don’t be dissapointed if you can’t do a certain exercise – there’s hundreds out there. Find ones you CAN do but are still challenging so you benefit from them. And if working out does absolutely nothing for you, then stop. And do something else. Do what makes you, your mind and your body happy.

Crispy Quinoa Coconut Crunch (2 Ways!)

  • Prep Time: 5m
  • Cook Time: 35m
  • Total Time: 40m
  • Yield: ~8-10 pieces


For The Regular Crunch

  • 1/2 c coconut chips
  • 1/2 c quinoa
  • 1 tbsp. pumpkin seeds
  • 1/3 c roughly chopped almonds
  • 1 tsp. hemp hearts
  • 2 tbsp. honey

For The Dark Chocolate Crunch

  • 1/2 c coconut chips
  • 1/2 c rainbow quinoa
  • 1 tbsp. pumpkin seeds
  • 1/3 c roughly chopped almonds
  • 1 tbsp. mini dark chocolate chips
  • 2 tbsp. honey


  1. Preheat your oven to 350°F
  2. Spread your quinoa over parchment paper on a cooking sheet.
  3. Bake for 25 minutes or until crispy (stir often to prevent burning).
  4. In a dry pan over medium heat, toss the almonds and let toast for a few minutes.
  5. Remove and set aside, then put the coconut chips in the pan and let them toast.
  6. After they've slightly browned, add the almonds back in and add the pumpkin seeds, the hemp hearts or chocolate chips (depending on the kind you're making), the crispy quinoa, and then lastly add the honey.
  7. Mix constantly for 30 seconds, then remove from heat.
  8. Transfer to a plate or pan with parchment paper to harden in the fridge for at least an hour.
  9. Remove from fridge and gently break it apart to create smaller bite sized pieces.
  10. Enjoy immediately or store in the fridge in an air-tight container.
