No Bake Dark Chocolate Cherry Energy Bars

So in my Sugarless Blueberry Pumpkin Seed Chia Jam post last week I talked about my new workout schedule and healthy lifestyle. So far it’s going great! Like I said, we started running. Just a few minutes to start and we’ll work our way up. My mom and I are nothing close to runners, but everyone starts somewhere! In my Cheesy Mushroom & Kale Stuffed peppers post from the week before I also mentioned I had a laptop on it’s way. Well I’m super excited – it’s finally here! I’m the proud new owner of a new-to-me MacBook! Its used but refurbished and was on sale for a really great price! I just love it. It’s so refreshing and performs a million times better than my other laptop (that’s now collecting dust but also serves as a second back-up for storage and something to torrent movies on etc). My first time trying it out I looked for a wallpaper with google images and embarrassingly enough I even had to google how to scroll down. I actually like the whole two-finger motion instead of clicking and dragging on a scroll bar. It’s the little things, I guess! (Just like these bars, Mmm!)

I am definitely having a great summer. Especially since I’ve gotten back into my healthy routines and workouts etc, but I’ve also been going a lot of places and doing a lot of things! My mom and my friend Emma and I have been climbing to the tops of lighthouses, visiting random tourist places and shops and even visited the smallest library in Canada (it happens to be about a 30-minute drive from my house and I had no idea it even existed). It’s just this tiny little adorable room with a table and chairs and a guestbook in the middle. Then a window with an incredible view, and a little bench outside that faces the same view as the window. This past week we also went clam digging, then came home and cooked and ate them right away! Seafood is probably my favorite kind of food. But speaking of favorite foods, I also LOVE quick and easy energy bars. So tasty for a quick pick-me-up after a workout or to grab and go before work! Cherries were on sale this week, and I knew I had to get a nice big bag and make some recipes with them. Love how these turned out!

My friend Emma took one bite and said “Mmm, it’s like a chocolate bar but good for you!”, which is exactly what I’m going for – so I guess I did pretty good. It’s hard to knock cravings, but these help big time. I always get a little craving for something sweet or chocolatey after I eat a meal, and these are great to snack on when I get those feelings. It’s exactly what I need and I don’t have to feel the guilt afterwards! But the best part is, these don’t even have to be baked! And since we’re smack in the middle of the hottest week of the summer, it’s great that I don’t even have to break a sweat or warm up the kitchen with the heat of the oven to make these! Love it!

No Bake Dark Chocolate Cherry Energy Bars

  • Prep Time: 5m
  • Yield: 6 bars

Ingredients

  • 3/4 c medjool dates
  • 1 tbsp. pure maple syrup
  • 1 tbsp. coconut oil // melted
  • 1/4 c ground flaxseed
  • 1/4 c + 3/4 cup 100% whole grain oats
  • 1/4 c cherries // pitted & quartered
  • 1/4 c melted dark chocolate

Directions

  1. In a blender or food processor, blend the dates, maple syrup, and coconut oil until smooth.
  2. Add 1/4 cup oats and continue blending.
  3. Transfer to a bowl and add the flaxseed and the other 3/4 cup oats and mix with a wooden spoon until fully incorporated.
  4. Fold in the cherries.
  5. Flatten by placing the mixture in between parchment paper and pressing down with something flat, shape it as you flatten to create a square shape.
  6. Gently cut into 6 pieces and separate each piece to drizzle the chocolate over.
  7. Allow to harden in the fridge for an hour.
  8. Store in the fridge in an air-tight container.
