Peaches & Cream Chia Parfait

Brett and I and our friends Josh and Taylor spent all day at the beach yesterday and I had such a great time! We went to Basin Head beach and it was only my 2nd time being there. There was a man who had a truck set up with paddle boards and a sign that said “$20/person 1 hour paddle boarding”. We all decided to try it out and now I totally want my own paddle board. He came out with us to teach us how to get on, stand up, paddle and turn. Then he basically let us go out on our own and have fun for an hour before he came back to get us. After paddle boarding it really made me want to try surfing some day!

Josh and Taylor are trying to go to a different beach every weekend that it’s sunny. Brett and I will probably be joining them a few times as long we we’re both off work! I’m already excited for more fun beach adventures!

Besides paddle boarding, we also played bocce ball! Then we went swimming and jumped off a high ledge into the water (most people jump off the bridge -it’s totally safe – but taylor and I were too scared). The water was cold but refreshing. And we ate a ton of yummy food. We brought sushi, grapes and vegetables and we also ate at the little take-out there. I got breaded shrimp and fries. Best breaded shrimp ever. Needless to say, it was a great day!

Although we had a ton of fun, Brett and I didn’t have so much fun by evening before bed. Our sun burns turned bright red and stung all over. Brett put more sun screen on than I did but I think his burn turned out worse. I only put sun screen on my shoulders thinking they’d be the only thing to burn. Not sure what put that idea in my head. I know next time to avoid the pain I’m having a bath in sun screen before we leave the house. But enough about my sun burns. I made this delicious peach & chia parfait and it makes all my problems and sun burns fade away. It’s so good! I hope it helps your problems fade away too 🙂


Peaches & Cream Chia Parfait

  • Prep Time: 5m
  • Serves: 1
  • Yield: 1 parfait

Ingredients

  • 2 small peaches // peeled & chopped
  • 1/2 c unsweetened almond milk // (or milk of choice)
  • 1/8 c chia seeds
  • 1 c plain greek yogurt
  • 1 tsp. vanilla
  • 1/2 pack of stevia
  • Few pieces of thinly sliced peaches
  • Mint leaves for garnish

Directions

  1. Blend the peaches and almond milk.
  2. In a bowl or container, combine the peach mixture and chia seeds and stir.
  3. Set in the fridge for atleast an hour or overnight.
  4. Press your thinly sliced peaches up against the inside of the dish you're serving it in (alternative method: lay your peach slices in between the layers)
  5. Layer your chia seeds and yogurt until your dish is full.
  6. Garnish with more peach and mint leaves
